Thai Yellow Curry…
Ingredients
  • 1 package extra-firm tofu
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 3 tablespoons yellow curry paste
  • 1 can (14 ounces) full-fat coconut milk

Steps
  1. Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for 1 minute more.
  2. Add the curry paste and stir to combine. Cook for 1 minute more.
  3. Add the coconut milk and stir to combine. Bring to a simmer.
  4. Add the tofu and simmer until heated through, about 5 minutes.
  5. Serve with cooked jasmine rice or noodles of your choice.
