Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for 1 minute more.
Add the curry paste and stir to combine. Cook for 1 minute more.
Add the coconut milk and stir to combine. Bring to a simmer.
Add the tofu and simmer until heated through, about 5 minutes.
Serve with cooked jasmine rice or noodles of your choice.
