Thai Summer Rolls
Ingredients
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon paprika
  • 3 tablespoons fish sauce, divided
  • 2 tablespoons lime juice, divided
  • 2 cups shredded cooked chicken breast (or any protein of your choice)
  • 1 cup thinly sliced red bell pepper strips (or any veggie of your choice)
  • 3 green onions, thinly sliced (white and green parts)

Steps
  1. In a large skillet over medium heat, heat the oil. Add the garlic and cook until fragrant, about 1 minute.
  2. Add the ginger, coriander, cumin, turmeric and paprika and cook for 1 minute more.
  3. Add 2 tablespoons of the fish sauce and 1 tablespoon of the lime juice. Add the chicken and bell pepper strips and cook until just heated through.
  4. Remove from heat and stir in the green onions.
  5. Divide the mixture among 8 rice paper wrappers. Sprinkle with remaining fish sauce and lime juice. Roll up each wrapper like a burrito to enclose filling.
  6. Serve with your favorite dipping sauce.
