In a large skillet over medium heat, heat the oil. Add the garlic and cook until fragrant, about 1 minute.
Add the ginger, coriander, cumin, turmeric and paprika and cook for 1 minute more.
Add 2 tablespoons of the fish sauce and 1 tablespoon of the lime juice. Add the chicken and bell pepper strips and cook until just heated through.
Remove from heat and stir in the green onions.
Divide the mixture among 8 rice paper wrappers. Sprinkle with remaining fish sauce and lime juice. Roll up each wrapper like a burrito to enclose filling.
