Ingredients
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger root
  • 2 tablespoons red curry paste
  • 1 (14.5 ounce) can coconut milk
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 zucchini, sliced into rounds

Steps
  1. Heat oil in a large skillet over medium heat. Add onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  2. Stir in ginger and curry paste; cook and stir for 1 minute.
  3. Pour in coconut milk; bring to a simmer. Stir in fish sauce and brown sugar.
  4. Add bell peppers and zucchini; simmer until vegetables are tender, about 10 minutes.
  5. Serve hot.
