Ingredients
  • 2 tablespoons vegetable oil
  • 1 tablespoon red curry paste
  • 1 tablespoon minced fresh ginger root
  • 1/4 teaspoon crushed red pepper flakes
  • 1 (14.5 ounce) can coconut milk
  • 2 tablespoons brown sugar
  • 3 tablespoons fish sauce
  • 1/2 cup vegetable broth
  • 2 cups broccoli florets
  • 1 red bell pepper, julienned
  • 1 (14 ounce) package firm tofu, drained and cubed

Steps
  1. Heat oil in a large skillet over medium-high heat.
  2. Stir in curry paste, ginger, and red pepper flakes. Cook and stir for 1 minute.
  3. Stir in coconut milk, brown sugar, and fish sauce. Bring to a boil; reduce heat to low and simmer for 5 minutes.
  4. Stir in vegetable broth, broccoli, bell pepper, and tofu. Simmer for 10 minutes.
  5. Serve hot over steamed rice.
