Ingredients
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon red curry paste
  • 1/2 onion, diced
  • 3 cups mixed vegetables of your choice (such as carrots, bell peppers, broccoli, and snow peas)
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon brown sugar
  • 2 tablespoons fish sauce

Steps
  1. Heat the vegetable oil in a large skillet over medium heat. Add the garlic and ginger and cook until fragrant, about 1 minute.
  2. Stir in the red curry paste and onion and cook until the onion is softened, about 3 minutes.
  3. Add the vegetables and stir to combine. Cook for 3 to 5 minutes or until they begin to soften.
  4. Pour in the coconut milk and stir to combine. Bring to a simmer and cook for 8 to 10 minutes or until the vegetables are tender.
  5. Stir in the brown sugar and fish sauce. Simmer for an additional 2 minutes.
  6. Serve hot with steamed rice.
