Ingredients
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • ½ teaspoon ground turmeric
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons red curry paste
  • 2 cups vegetable broth (or chicken broth)

Steps
  1. Heat the oil in a large saucepan over medium heat. Add the garlic and ginger and cook for 1 minute.
  2. Add the coriander, cumin, and turmeric and cook for 1 minute more.
  3. Stir in the coconut milk and curry paste and bring to a simmer.
  4. Stir in the broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
  5. Serve hot with rice or noodles.
