Ingredients
  • 1 package extra-firm tofu
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 3 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon sugar or agave nectar

Steps
  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and sauté for 5 minutes until softened. Add the bell pepper and curry paste and cook for another 2 minutes.
  2. Add the vegetable broth, coconut milk, soy sauce or tamari, lime juice and sugar or agave nectar. Bring to a simmer and cook for 10 minutes.
  3. Add the tofu cubes and cook for another 5 minutes until heated through. Taste and adjust seasoning as desired.
  4. Serve hot with desired toppings.
