Ingredients
  • 1/2 package (4 oz.) rice noodles
  • 1 tablespoon vegetable oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon red curry paste
  • 1 can (14 oz.) coconut milk
  • 2 tablespoons fish sauce
  • 2 tablespoons fresh lime juice
  • 3 cups cooked chicken, diced

Steps
  1. Cook noodles according to package instructions.
  2. Heat oil in a large skillet over medium heat. Add onion and garlic and cook until fragrant, about 2 minutes.
  3. Stir in curry paste and cook for 1 minute.
  4. Add coconut milk, fish sauce and lime juice. Bring to a simmer.
  5. Add chicken and cook until heated through.
  6. Divide noodles into 4 bowls. Top with chicken curry mixture.
  7. Garnish with cilantro or basil leaves.
