- 1 tablespoon oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup diced red bell pepper
- 1/4 cup Thai red curry paste
- 2 cups cooked jasmine rice
- 3 tablespoons fish sauce
- 1 teaspoon sugar
- 1/4 cup coconut milk
- 1/4 cup chopped fresh cilantro
- Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring frequently, until softened, about 5 minutes.
- Add the bell pepper and curry paste and cook, stirring constantly, for 1 minute.
- Stir in the cooked rice, fish sauce, sugar and coconut milk. Cook until heated through and the rice is lightly browned, about 5 minutes.
- Stir in the cilantro and serve hot.
