Ingredients
  • 1 tablespoon oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup diced red bell pepper
  • 1/4 cup Thai red curry paste
  • 2 cups cooked jasmine rice
  • 3 tablespoons fish sauce
  • 1 teaspoon sugar
  • 1/4 cup coconut milk
  • 1/4 cup chopped fresh cilantro

Steps
  1. Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring frequently, until softened, about 5 minutes.
  2. Add the bell pepper and curry paste and cook, stirring constantly, for 1 minute.
  3. Stir in the cooked rice, fish sauce, sugar and coconut milk. Cook until heated through and the rice is lightly browned, about 5 minutes.
  4. Stir in the cilantro and serve hot.
