Ingredients
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1/4 cup coconut milk
  • 1/4 cup water
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 2 tablespoons fish sauce

Steps
  1. Heat oil in a medium pan over medium-high heat. Add garlic and ginger and cook for 1 minute.
  2. Add red curry paste and cook for 1 minute more.
  3. Stir in coconut milk, water, sugar, salt and fish sauce. Bring to a boil, then reduce heat to low and simmer for 5 minutes.
  4. Remove from heat and let cool before using as a dumpling filling.
