- 1 lb. beef, cut into cubes
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon red curry paste
- 1 can (14 oz.) coconut milk
- 2 tablespoons fish sauce
- 1 teaspoon sugar
- Heat oil in a large skillet over medium-high heat. Add beef and cook until browned on all sides.
- Add onion and garlic and cook until softened.
- Stir in curry paste and cook for 1 minute.
- Add coconut milk, fish sauce, and sugar. Bring to a boil.
- Reduce heat to low and simmer for 10 minutes or until beef is cooked through.
- Serve with rice or noodles.
