- 1/2 cup diced onion
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 3 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 1/4 teaspoon crushed red pepper flakes (optional)
- 3 cups cooked jasmine rice, cooled to room temperature
- 1/4 cup soy sauce or tamari sauce (gluten-free if needed)
- 2 tablespoons fish sauce (optional)
- 1/4 cup pineapple juice or orange juice (or a combination of both)
- 3 tablespoons brown sugar or coconut sugar (or a combination of both)
- Heat the oil in a large skillet over medium heat. Add the onion and bell peppers and cook for 3-4 minutes, stirring occasionally.
- Add the garlic, ginger, and red pepper flakes and cook for 1 minute more.
- Add the cooked rice to the skillet and stir to combine. Cook for 2-3 minutes until heated through.
- Add the soy sauce, fish sauce, pineapple juice, and brown sugar. Stir to combine.
- Cook for an additional 3-4 minutes until everything is heated through.
- Serve warm with your favorite toppings.
