Ingredients
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 3 cups cooked jasmine rice, cooled to room temperature
  • 1/4 cup soy sauce or tamari sauce (gluten-free if needed)
  • 2 tablespoons fish sauce (optional)
  • 1/4 cup pineapple juice or orange juice (or a combination of both)
  • 3 tablespoons brown sugar or coconut sugar (or a combination of both)

Steps
  1. Heat the oil in a large skillet over medium heat. Add the onion and bell peppers and cook for 3-4 minutes, stirring occasionally.
  2. Add the garlic, ginger, and red pepper flakes and cook for 1 minute more.
  3. Add the cooked rice to the skillet and stir to combine. Cook for 2-3 minutes until heated through.
  4. Add the soy sauce, fish sauce, pineapple juice, and brown sugar. Stir to combine.
  5. Cook for an additional 3-4 minutes until everything is heated through.
  6. Serve warm with your favorite toppings.
