Ingredients
  • 1 tablespoon olive oil
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup snow peas, trimmed and halved
  • 1/4 teaspoon ground ginger
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar

Steps
  1. Heat the oil in a large skillet over medium-high heat. Add the bell pepper, broccoli, snow peas, and ginger. Cook for 3-4 minutes until vegetables are tender.
  2. In a small bowl, whisk together the peanut butter, soy sauce, and rice vinegar.
  3. Add the peanut butter mixture to the skillet and stir to combine. Cook for 1-2 minutes until everything is heated through.
  4. Serve with cooked rice or quinoa.
  5. Garnish with chopped peanuts and fresh cilantro leaves if desired.
