Ingredients
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1 (8-ounce) package udon noodles, cooked according to package instructions

Steps
  1. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic powder and ground ginger until combined.
  2. In a large bowl, combine cooked udon noodles and peanut sauce. Toss to combine.
  3. Serve hot or cold.
  4. Optional: top with chopped peanuts, cilantro and lime wedges.
