- 3 tablespoons creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon honey
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground ginger
- 1 (8-ounce) package udon noodles, cooked according to package instructions
- In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic powder and ground ginger until combined.
- In a large bowl, combine cooked udon noodles and peanut sauce. Toss to combine.
- Serve hot or cold.
- Optional: top with chopped peanuts, cilantro and lime wedges.
