- 1/4 cup lime juice
- 3 tablespoons fish sauce
- 2 tablespoons sugar
- 1 tablespoon chili-garlic sauce
- 8 ounces dried rice noodles
- 2 cups shredded cooked chicken
- 1/2 cup chopped fresh cilantro leaves
- 1/2 cup chopped fresh mint leaves
- 1/4 cup chopped unsalted peanuts
- In a medium bowl, whisk together the lime juice, fish sauce, sugar and chili-garlic sauce until the sugar is dissolved.
- Bring a large pot of water to a boil. Add the rice noodles and cook until al dente, about 5 minutes. Drain and rinse with cold water.
- In a large bowl, combine the cooked noodles with the chicken, cilantro, mint and peanuts.
- Pour the dressing over the noodle mixture and toss to combine.
- Serve chilled or at room temperature.
