- 2 ripe mangoes, peeled, pitted and diced
- 1/4 cup fresh cilantro leaves, chopped
- 1/4 cup roasted peanuts, finely chopped
- 2 tablespoons red onion, minced
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon grated fresh ginger root
- In a medium bowl, combine the mangoes, cilantro, peanuts and red onion.
- In a small bowl, whisk together the lime juice, honey, olive oil and ginger root.
- Drizzle the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
