Thai Green Curry …
Ingredients
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger root
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons Thai green curry paste

Steps
  1. Heat oil in a large saucepan over medium heat. Add garlic, ginger, coriander, cumin, turmeric and cayenne pepper; cook and stir until fragrant, about 1 minute. Add coconut milk and curry paste; bring to a simmer.
  2. Add vegetables to the saucepan; reduce heat to low and simmer for 10 minutes or until vegetables are tender.
  3. Serve with rice or noodles.
