- 2 cups cooked jasmine rice
- 1/4 cup vegetable oil
- 2 cloves garlic, minced
- 1/2 onion, diced
- 1/2 red bell pepper, diced
- 1/2 cup frozen peas and carrots
- 3 tablespoons fish sauce
- 3 tablespoons soy sauce
- 1 teaspoon sugar
- Heat the oil in a large skillet over medium-high heat. Add the garlic and onion and cook until softened, about 3 minutes.
- Add the bell pepper, peas and carrots and cook for another 2 minutes.
- Add the cooked rice to the skillet and stir to combine. Cook for about 5 minutes, stirring occasionally.
- Add the fish sauce, soy sauce and sugar. Stir to combine and cook for another 2 minutes.
- Serve hot.
