Ingredients
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon curry powder
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 4 cups chicken broth
  • 1 can (14 ounces) coconut milk
  • 2 boneless, skinless chicken breasts, cut into bite-size pieces

Steps
  1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened.
  2. Add the garlic, ginger and curry powder and cook for 1 minute.
  3. Stir in the red curry paste and fish sauce.
  4. Pour in the chicken broth and coconut milk. Bring to a boil.
  5. Reduce heat to low and add the chicken pieces. Simmer for 15 minutes.
  6. Serve hot.
