- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 pounds ground beef
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano leaves
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 2 (15-ounce) cans diced tomatoes with juice
- 2 (15-ounce) cans kidney beans, drained and rinsed
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the ground beef and cook until browned. Drain off any excess fat.
- Add the chili powder, cumin, oregano, paprika and cayenne pepper (if using). Stir to combine.
- Add the tomatoes with their juice and the beans. Bring to a simmer and cook for 20 minutes.
- Serve hot with your favorite toppings!
