Texas Chili
Ingredients
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 pounds ground beef
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 (15-ounce) cans diced tomatoes with juice
  • 2 (15-ounce) cans kidney beans, drained and rinsed

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the ground beef and cook until browned. Drain off any excess fat.
  3. Add the chili powder, cumin, oregano, paprika and cayenne pepper (if using). Stir to combine.
  4. Add the tomatoes with their juice and the beans. Bring to a simmer and cook for 20 minutes.
  5. Serve hot with your favorite toppings!
