Tandoori Chicken …
Ingredients
  • 1 lb. boneless, skinless chicken thighs
  • 2 tablespoons tandoori masala
  • 1 tablespoon garam masala
  • 3 tablespoons vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon cayenne pepper (optional)
  • 1 (14-ounce) can crushed tomatoes

Steps
  1. Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and ginger and cook for an additional minute.
  3. Add the chicken and cook until browned on both sides.
  4. Add the tandoori masala, garam masala, cayenne pepper (if using), and tomatoes. Stir to combine.
  5. Bring to a simmer and reduce heat to low. Cover and let simmer for 20 minutes or until chicken is cooked through.
  6. Serve with your favorite accompaniments.
