Tamarind Chutney
Ingredients
  • 1 cup tamarind pulp
  • 1/4 cup jaggery or brown sugar
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon garam masala
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 2-3 curry leaves

Steps
  1. In a medium saucepan, heat the oil over medium heat.
  2. Add the mustard seeds and curry leaves and cook until they start to sizzle.
  3. Add the tamarind pulp, jaggery, chili powder, cumin powder and garam masala. Stir to combine.
  4. Bring to a boil, then reduce heat and simmer for about 10 minutes or until the chutney thickens.
  5. Remove from heat and let cool before serving.
