Tacos Al Pastor
Ingredients
  • 2 lbs pork shoulder
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 3 cloves garlic, minced
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 tablespoons achiote paste
  • 6-8 corn tortillas

Steps
  1. Cut the pork into thin strips.
  2. In a bowl, mix together the orange juice, pineapple juice, garlic, oregano, cumin and chili powder.
  3. Add the pork and stir to coat in the marinade. Cover and refrigerate for at least 1 hour or overnight.
  4. Heat a large skillet over medium-high heat. Add the marinated pork and cook until browned and cooked through, about 10 minutes.
  5. To assemble tacos: warm tortillas on a hot skillet or in the microwave. Place some of the cooked pork onto each tortilla and top with diced onion, cilantro, lime wedges and salsa.
