- 1 lb. ground beef
- 1 onion, diced
- 1 (15 oz.) can corn, drained
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (10 oz.) can Rotel tomatoes and chilies
- 2 (14.5 oz.) cans diced tomatoes
- 2 cups chicken broth
- 2 tablespoons chili powder
- 2 teaspoons cumin
- salt and pepper to taste
- In a large pot over medium-high heat, cook the ground beef and onion until the beef is browned.
- Add the corn, black beans, Rotel tomatoes and chilies, diced tomatoes and chicken broth. Stir to combine.
- Add the chili powder, cumin, salt and pepper and stir to combine.
- Bring the soup to a boil then reduce heat to low. Simmer for 20 minutes.
- Serve with homemade tortilla chips.
