- 1 pound ground beef
- 1/2 onion, diced
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 can (14.5 ounces) diced tomatoes with green chilies, undrained
- 1 can (10 ounces) enchilada sauce
- 2 cups water
- 1 package taco seasoning
- In a large pot over medium heat, cook the ground beef and onion until the beef is no longer pink.
- Add the black beans, corn, tomatoes with green chilies, enchilada sauce and water. Stir in the taco seasoning.
- Bring to a boil; reduce heat and simmer for 15 minutes.
- Serve with desired toppings such as shredded cheese, sour cream or avocado.
