Taco Soup
Ingredients
  • 1 pound ground beef
  • 1/2 onion, diced
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 can (14.5 ounces) diced tomatoes with green chilies, undrained
  • 1 can (10 ounces) enchilada sauce
  • 2 cups water
  • 1 package taco seasoning

Steps
  1. In a large pot over medium heat, cook the ground beef and onion until the beef is no longer pink.
  2. Add the black beans, corn, tomatoes with green chilies, enchilada sauce and water. Stir in the taco seasoning.
  3. Bring to a boil; reduce heat and simmer for 15 minutes.
  4. Serve with desired toppings such as shredded cheese, sour cream or avocado.
  5. Enjoy!
