- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 head romaine lettuce, chopped
- 1 can black beans, drained and rinsed
- 1 can corn, drained and rinsed
- 2 medium tomatoes, diced
- 1/2 red onion, diced
- 1/2 cup cheddar cheese, shredded
- In a large skillet over medium heat, cook the ground beef until no longer pink. Drain any excess fat.
- Add the taco seasoning and water and stir to combine. Cook for 5 minutes or until the liquid has evaporated.
- In a large bowl, combine the lettuce, black beans, corn, tomatoes and red onion.
- Divide the lettuce mixture among four bowls. Top each bowl with the taco meat and shredded cheese.
- Serve immediately.
