- 1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup cornstarch
- 2 tablespoons vegetable oil
- 1/2 cup white vinegar
- 1/4 cup ketchup
- 1/4 cup sugar
- 2 tablespoons soy sauce
- In a medium bowl, combine the chicken cubes and cornstarch. Toss to coat.
- Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown, about 5 minutes.
- Add the vinegar, ketchup, sugar and soy sauce to the skillet. Stir to combine.
- Reduce heat to low and simmer for 10 minutes or until chicken is cooked through.
- Serve over rice.
