- 2 large sweet potatoes, peeled and cut into wedges
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the sweet potato wedges, olive oil, garlic powder, smoked paprika, cayenne pepper (if using), salt and pepper.
- Toss to coat the potatoes evenly.
- Spread the potatoes on the prepared baking sheet in a single layer.
- Bake for 25-30 minutes, flipping halfway through cooking time.
- Serve with garlic aioli.
