Sweet Potato Panc…
Ingredients
  • 2 cups of cooked sweet potatoes
  • 1/2 cup of all-purpose flour
  • 2 eggs
  • 1/4 teaspoon of baking powder
  • 1/4 teaspoon of salt

Steps
  1. Mash the sweet potatoes in a bowl until they are creamy.
  2. Add the flour, eggs, baking powder and salt, and mix until completely combined.
  3. Heat a large skillet over medium heat and add enough oil to coat the bottom.
  4. Drop 1/4 cup of batter for each pancake into the skillet.
  5. Cook for 2 to 3 minutes or until golden brown on both sides.
  6. Serve warm with your favorite topping.
