Ingredients
  • 2 large sweet potatoes, peeled and grated
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

Steps
  1. In a large bowl, combine the grated sweet potatoes, flour, baking powder, garlic powder, cayenne pepper and salt.
  2. Mix until all ingredients are evenly distributed.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Form the sweet potato mixture into small patties and place them in the hot skillet.
  5. Cook for 4-5 minutes per side until golden and crispy.
