- 4 sweet potatoes
- 1/4 cup coconut oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Sea salt and pepper to taste
- Preheat oven to 350 degrees F (175 degrees C).
- Poke sweet potatoes with a fork and place on a baking sheet. Bake in preheated oven for 45 minutes or until tender.
- Remove from oven and cut each potato lengthwise. Scoop out the insides into a bowl, leaving about 1/4 inch of flesh inside the skins.
- Mix together the scooped potato, coconut oil, garlic powder, onion powder, sea salt, and pepper.
- Spoon mixture back into the potato skins. Place stuffed potatoes onto a baking sheet.
- Bake in preheated oven for an additional 10 minutes.
