- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda

- 2 eggs, separated
- 2 cups buttermilk
- 1/4 cup melted butter or vegetable oil

- 1 teaspoon vanilla extract

- In another bowl, whisk together the egg yolks, buttermilk, butter or oil, sugar, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Gently fold in the egg whites until incorporated.
- Heat a waffle iron according to manufacturer's directions. Grease with butter or cooking spray if necessary.
- Cook waffles according to manufacturer's instructions. Serve with fresh strawberries and syrup.
