Ingredients
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 tablespoons cold butter, cut into small pieces
- 2 tablespoons milk or cream
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, chopped

Steps
- Preheat oven to 350°F. Grease an 8x8 inch baking pan.
- In a medium bowl, mix together flour, sugar, baking powder, and salt.
- Cut in butter with a pastry blender until mixture resembles coarse crumbs.
- Add milk and vanilla extract; stir until just combined.
- Press dough into prepared pan.
- Bake for 18-20 minutes or until golden brown.
- Let cool completely before assembling parfaits.
- To assemble parfaits: Layer shortcake cubes with strawberries and whipped cream in 8 small glasses or jars. Serve immediately.
