Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups fresh strawberries, hulled and diced

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in vanilla and egg.
  3. Combine flour, baking powder, and salt; stir into the creamed mixture until well blended.
  4. Spread batter evenly into the prepared pan. Sprinkle with diced strawberries.
  5. Bake for 25 to 30 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean.
  6. Allow to cool before cutting into bars.
  7. Spread softened ice cream over half of the bars. Top with remaining bars to make sandwiches.
