- 1/2 cup butter, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups fresh strawberries, hulled and diced
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in vanilla and egg.
- Combine flour, baking powder, and salt; stir into the creamed mixture until well blended.
- Spread batter evenly into the prepared pan. Sprinkle with diced strawberries.
- Bake for 25 to 30 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean.
- Allow to cool before cutting into bars.
- Spread softened ice cream over half of the bars. Top with remaining bars to make sandwiches.
