- 1/2 cup butter, melted
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 1/2 cups strawberry ice cream, softened
- 1/4 cup strawberry jam or preserves
- Preheat oven to 350°F. Grease a 9x13 inch baking pan.
- In a large bowl, mix together the butter, sugar and vanilla extract until smooth. Stir in the flour, baking powder and salt until combined.
- Press half of the dough into the prepared pan. Spread the ice cream over the dough in an even layer.
- Drop spoonfuls of jam or preserves over the ice cream layer. Crumble remaining dough over the top.
- Bake for 25-30 minutes, or until golden brown on top.
