Strawberry Pound …
Ingredients
  • 1/2 cup butter, softened
  • 3/4 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 cup fresh strawberries, diced

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. Cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  3. Combine the flour, baking powder and salt; stir into the creamed mixture alternately with the milk.
  4. Fold in strawberries. Pour batter into prepared pan.
  5. Bake for 40 to 50 minutes in the preheated oven. Cake is done when it springs back to the touch.
  6. Cool in pan for 10 minutes before removing to cool completely on wire rack.
