- 1/2 cup butter, softened
- 3/4 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 cup fresh strawberries, diced
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
- Cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking powder and salt; stir into the creamed mixture alternately with the milk.
- Fold in strawberries. Pour batter into prepared pan.
- Bake for 40 to 50 minutes in the preheated oven. Cake is done when it springs back to the touch.
- Cool in pan for 10 minutes before removing to cool completely on wire rack.
