Strawberry Pancakā€¦
Ingredients
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 3 tablespoons vegetable oil
  • 2 cups buttermilk or 2 cups milk plus 2 tablespoons lemon juice or vinegar
  • 1 cup chopped fresh strawberries

Steps
  1. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In a separate bowl, mix together the eggs, oil and buttermilk or milk mixture. Add to the dry ingredients and stir just until moistened.
  2. Heat a lightly greased griddle or large skillet over medium-high heat. Pour 1/4 cup of batter onto the griddle for each pancake. Sprinkle with chopped strawberries. Flip when bubbles form on top of pancakes.
  3. Cook until second side is golden brown. Serve hot.
