- 3/4 cup all-purpose flour
- 1/4 cup almond flour
- 1/4 teaspoon salt
- 6 tablespoons butter, cold and cubed
- 2 tablespoons cold water
- 2 cups mascarpone cheese
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 3 eggs, lightly beaten
- Preheat oven to 350°F. Grease a 9-inch tart pan with butter.
- In a medium bowl, whisk together the all-purpose flour, almond flour and salt.
- Using a pastry cutter or two knives, cut in the butter until it resembles coarse meal.
- Add the cold water and mix until it forms a ball of dough.
- Press the dough into the bottom and up the sides of the tart pan.
- Bake for 15 minutes or until golden brown.
- In a medium bowl, beat together mascarpone cheese, sugar and vanilla extract until creamy.
- Add eggs and mix until well combined.
- Pour filling into pre-baked crust. Bake for 25 minutes or until set in center.
- Cool completely before serving.
