- 2 cups strawberries, hulled and quartered
- 1/2 cup freshly squeezed lemon juice
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 1/2 cups cold water
- In a medium saucepan, combine the strawberries, lemon juice, sugar and salt.
- Bring to a boil over medium-high heat and cook for 5 minutes, stirring occasionally.
- Remove from the heat and let cool.
- Strain the mixture through a fine mesh sieve into a bowl, pressing on the solids to extract as much liquid as possible.
- Discard the solids.
- Add the cold water to the strawberry mixture and stir until combined.
- Pour into popsicle molds and freeze until solid, about 6 hours. Enjoy!
