- 2 cups fresh strawberries, hulled and quartered
- 1/4 cup sugar
- 1 tablespoon lemon juice
- Preheat oven to 175°F.
- In a food processor or blender, puree strawberries, sugar and lemon juice until smooth.
- Spread the puree on a parchment-lined baking sheet in an even layer.
- Bake for 2-3 hours, rotating the pan halfway through.
- The leather should be dry and slightly sticky when ready. If it's still wet, bake for another 15-30 minutes. Allow to cool before cutting into strips.
- Store in an airtight container at room temperature for up to two weeks.
