- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats
- 1/2 cup packed light brown sugar
- 1/4 teaspoon salt
- 6 tablespoons cold unsalted butter, cut into small cubes
- 3 cups fresh strawberries, hulled and quartered
- 3 tablespoons granulated sugar
- 2 tablespoons cornstarch
- Preheat oven to 375°F. Grease a 9-inch pie plate.
- In a medium bowl, whisk together the flour, oats, brown sugar, and salt.
- Using a pastry blender or two knives, cut in the butter until it resembles coarse crumbs.
- Press the mixture into the prepared pie plate. Bake for 12 to 15 minutes or until lightly browned.
- In a medium bowl, combine the strawberries with the granulated sugar and cornstarch. Mix gently until all of the strawberries are coated.
- Pour into the pre-baked crust. Sprinkle with remaining oat mixture.
- Bake for 30 to 35 minutes or until golden brown and bubbly.
- Cool completely before serving.
