Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small cubes
  • 3 cups fresh strawberries, hulled and quartered
  • 3 tablespoons granulated sugar
  • 2 tablespoons cornstarch

Steps
  1. Preheat oven to 375°F. Grease a 9-inch pie plate.
  2. In a medium bowl, whisk together the flour, oats, brown sugar, and salt.
  3. Using a pastry blender or two knives, cut in the butter until it resembles coarse crumbs.
  4. Press the mixture into the prepared pie plate. Bake for 12 to 15 minutes or until lightly browned.
  5. In a medium bowl, combine the strawberries with the granulated sugar and cornstarch. Mix gently until all of the strawberries are coated.
  6. Pour into the pre-baked crust. Sprinkle with remaining oat mixture.
  7. Bake for 30 to 35 minutes or until golden brown and bubbly.
  8. Cool completely before serving.
