Ingredients
  • 1/2 lb. rice noodles
  • 3 Tbsp. vegetable oil
  • 1/2 red onion, diced
  • 1/2 red bell pepper, sliced
  • 1/2 cup snow peas, halved
  • 3 cloves garlic, minced
  • 1 Tbsp. fresh ginger, grated
  • 1 Tbsp. soy sauce

Steps
  1. Bring a large pot of water to a boil and cook the rice noodles according to the package instructions.
  2. Heat the oil in a large skillet over medium-high heat.
  3. Add the onion and bell pepper and cook for 3 minutes.
  4. Add the snow peas, garlic, and ginger and cook for an additional 2 minutes.
  5. Stir in the soy sauce and cooked noodles and cook for an additional 3 minutes.
  6. Serve hot.
