- 1/2 lb. rice noodles
- 3 Tbsp. vegetable oil
- 1/2 red onion, diced
- 1/2 red bell pepper, sliced
- 1/2 cup snow peas, halved
- 3 cloves garlic, minced
- 1 Tbsp. fresh ginger, grated
- 1 Tbsp. soy sauce
- Bring a large pot of water to a boil and cook the rice noodles according to the package instructions.
- Heat the oil in a large skillet over medium-high heat.
- Add the onion and bell pepper and cook for 3 minutes.
- Add the snow peas, garlic, and ginger and cook for an additional 2 minutes.
- Stir in the soy sauce and cooked noodles and cook for an additional 3 minutes.
- Serve hot.
