- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup frozen peas and carrots
- 3 cups cooked white rice
- 2 tablespoons soy sauce
- Heat oil in a large skillet over medium heat. Add onion and garlic; cook and stir until onion is tender.
- Add bell pepper, peas and carrots; cook and stir until vegetables are tender.
- Stir in rice and soy sauce. Cook and stir until heated through.
- Serve hot.
